      1. Easy: 1/4 cup rum 1/4 cup maple syrup. If your cooking on a rack, as I do, I pour both over the turkey right at the beginning. Then start basting right from the get-go. As time passes the maple syrup and rum start to get stickier and turn the skin into a golden mahogany. The steaming action keep the bird moist and adds a slight sweet/smokey flavor that is truly rich and wonderful. πŸ™‚
